Investigation and application of resource management in meal planning, preparation, presentation and service of food in private and public settings. Emphasis placed on the management and usage of time, energy, money, equipment, utilities and food goods as well as the selection of nutritious foods within food preparation and service environments. Development and practical application of instructional strategies designed for presentations that meet the needs of diverse audiences in FCS. Includes an overview of counseling theory and skills used in education to promote behavior change.
